INGREDIENTS
Eggplant
Zuchinni
Squash
Fresh Mozzarella
Basil
Rosemary (Garnish)
Baby Tomatoes
Extra Virgin Olive Oil
Balsamic Glaze
DIRECTIONS
Slice Vegetables (not Tomatoes) into 1/4 inch rounds
Toss to coat in Salt Pepper and EVOO
Heat Grill Pan very Hot
Sear Vegetables until grill marks appear (Set aside)
To Serve
Slice Mozzarella same thickness as vegetables
layer 1 of each vegetables between Cheese
Drizzle with Olive oil, and Balsamic Glaze and hold together stack with sprig of fresh rosemary
